(B) In FOOD that is not TIME/TEMPERATURE CONTROL FOR SAFETY FOOD with their handles above the top of the FOOD within containers or EQUIPMENT that can be closed, such as bins of sugar, flour, or cinnamon. Observed scoops in ice cream toppings and ice stored with the handle touching the food. Store all scoops with handles above the food and maintain by the next routine inspection. |

4-903.11 (A)(1)(2)(3): (A) Except as specified in ¶ (D) of this section, cleaned EQUIPMENT and UTENSILS, laundered LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored:
(1) In a clean, dry location;
(2) Where they are not exposed to splash, dust, or other contamination; and
(3) At least 15 cm (6 inches) above the floor. Spatulas were stored between the plastic knife rack and wall. Store all clean utensils where they are not exposed to contamination and maintain by the next routine inspection. |
